I made some eggs for breakfast this morning. Some days, your eggs break and are just ugly. It’s one of those days.
I found something else ugly that tastes amazing too. Shakeology Chocolate! I have really been on point with this C2C plan. I’m used to an 80/20 policy for my life, but I’ve been super focused for the 21 Day Fix Extreme TV Test Group. Not having chocolate was killing me. So I found a way to have chocolate.
- Scoop of Chocolate Shakeology
- TBS(ish) of melted coconut oil
Mix the shakeo into the coconut oil, then spread on a piece of wax paper. Throw this in the freezer for an hour to harden. You’ll want to keep it in the freezer as coconut oil will get melty even at room temperature. Break of little delectable slices when needed…or all at once.
Dinner was a little more traditional. I threw a pork loin roast in the crockpot. I had found this thing on sale for $2, complete with vegetables. The spice mix they put in there with it was highly suspect. I didn’t recognize most of the ingredients, so I just used my DAKS Steakhouse seasoning instead. Turned out great.
I did experiment a little with some leftover spaghetti squash. I squeezed the water out as best I could, then made patties. I breaded with a little almond meal and pan-fried them in coconut oil. Interesting. Glad I tried them. They have potential, but I need to play with the concept. Experimentation is the spice of life.
